MIXED VEG CHETINAD MASALA SAMOSA

Ingredients used in MIXED VEG CHETINAD MASALA SAMOSA
• All-purpose flour - 300 grams.
• Ajwain - ½ tea spoon.
• Coriander seeds - 1 tea spoon.
• Cumin seeds - ½ tea spoon.
• Cardamom - 4 numbers.
• Cloves - 4 numbers.
• Cinnamon stick (small) - 3 numbers.
• Red chilies - 3 numbers.
• Fennel seeds - ½ tea spoon.
• Black peppercorns - ½ tea spoon.
• Marathi moggu (capers) - 1 number.
• Lichen - 3 numbers.
• Cashew nuts pieces - 8 numbers.
• Chopped ginger - ½ tea spoon.
• Curry leaves - 1 spring.
• Chopped tomatoes - 2 numbers.
• Chopped onions - 1 number.
• Turmeric powder - 1/4 tea spoon.
• Chopped green chilies - 3 numbers.
• Carrot - 1 number.
• Green peas - 2 tablespoons.
• Finely chopped beans - 2 tablespoons.
• Chopped potatoes - ½ cup.
• Lime juice - 1 number.
• Salt - to taste.
• Oil - as required.
• Water - as required.
Method:
  • Dry roast all the spices (coriander seeds, cumin, cardamon, clove, cinnamon, peppercorn, red chili, fennel, lichen and Marathi moggu) in a pan until they givea nice aroma. Once done, put these spices in the blender and grind into a fine powder.
  • Heat very little oil in a pan, add cashew nut pieces and fry till they get slightly colored.
  • Then add chopped ginger, salt, curry leaves, tomatoes, onions, and turmeric powder. Cook this foralmost 2 minutes.
  • Add chopped green chilies, carrot, peas, beans and cook them till most of the moisture is gone.
  • After that add little amount of above prepared Chettinad masala and mix it well.
  • Add boiled & chopped potatoes and saute for sometime.
  • Drizzle some lime juice, mix it and switch off the flame. Transfer this (mix veg Chettinad masala) mixture in a plate and allow it to cool.
  • In a mixing bowl, add all-purpose flour (maida), ajwain, salt, oil, and water. Then knead the flour to make a stiff dough. Cover the dough and rest it for about half an hour.
  • Divide the dough into equal portions and with help of the rolling pin shape them into elongated puri shape. Cut it in the center and make 2 halves.
  • Take one sheet, apply water on the edges, bring the two ends closer and seal to make a pocket similar to cone. Stuff the Mix Veg Chettinad Masala mixture and seal the top nicely by pressing edges properly.Repeat the process for rest of the samosa
  • Heat oil in a pan. Deep fry these samosas in medium hot oil till they are crisp and golden in color.
  • Take out samosa on apaper towel so extra oil will get absorbed.

Mix Veg ChettinadMasala Samosa is ready to serve.

HI sanjay, Good tips. A quick question. If I had to make these samosas in bulk, how can I store in the fridge? Do I store it raw or slightlydeep fry it? Thanks
