Ingredients used in MAYONNAISE
• Egg yolk - 2 number.
• Sugar (optional) - to taste.
• Mustard powder - 1/4 tea spoon.
• Vinegar - 1 tablespoon.
• Pepper powder - 1/2 tea spoon.
• Lime juice - 1/2 tea spoon.
• Salt - 1/2 tea spoon.
• Corn oil - 1 cup.
Method:
  • In a bowl, separate eggs yolk and egg white.
  • Add sugar, mustard powder, pepper powder, lemon juice, vinegar, salt to the egg yolk and whisk it well.
  • Slowly add oil continue whisking the egg yolk. [Note:- continuous stirring will avoid curdling to take place]
  • Thick mayonnaise is ready.

Alternative to curdled mayonnaise:-

  • Transfer the curdled mixture to another bowl, use this in place of oil and repeat the above mayonnaise preparation. Continuous whisking is the key to get thick mayonnaise.

make it in a blender its easy. Also add a tsp of sugar n pepper powder to give flavor. I usually use the whole egg.It makes it lighter.

Hey buddy ! There are so  so many recipes but nobody had the common sense to discuss how to handle curdled oil.. i guess it takes a jugaadu Indian mind to discuss that.. thanks bro..you saved me 500 ml of oil and a lot more.. thank you so much !! ?
