Ingredients used in karela (bitter guard) fry
• Oil - 4tbsp .
• Tumeric - 1tbsp .
• Rasam powder - 3tbsp .
• Salt - to taste .
• Jaggery - 5tbsp .
• Tamarind juice - 5 tbsp .
• Bitter guard - 1/4kg grams.
• Curry leaves - .
• Mustard seeds - 1 tbsp .
• Udad dal - 1tbsp .
Method:
first of all cut the karela in to fine pieces. now take a frying pan , add oil and put the mustard seeds and udad dal . when it starts spluttering add curry leaves . now add the cut karelas andfry them in the oil . fry nicely till the karela becomes brown and crispy. now add some turmeric and salt . fry for 2 min. now slowly add the tamarind juice and jaggery and mix it well . the karelas should cook in this tamaind juice . keep stirring often to avoid burning . now add the rasm powder and again cook it for 5 min so that the powder gets evenly spread to the entire mixture . now remove ie from fire and serve with rice and dal or you can also mix it with rice with coconut oil.
