Ingredients used in Coconut cookies
• Desiccated coconut - 55 grams.
• Egg - 2 tablespoons.
• Butter - 100 grams.
• Sugar powder - 100 grams.
• All-purpose flour - 200 grams.
• Vanilla essence - 1 tea spoon.
Method:
  • In a bowl, add butter (at room temperature) and cream it.
  • Then add powdered sugar, vanilla essence, egg to the above mixture and mix well.
  • In it, add desiccated coconut powder and whisk it again. Now, let it rest in the refrigerator for about 15 minutes.
  • Then divide into small portions and roll them like rotis .
  • Sprinkle the above-prepared coconut and sugar mixture on top of it and roll it again.
  • Later cut it into even sizes, and arrange the cookies in the tray.
  • Now, bake it for about 15 minutes at 180-degree centigrades and serve it.
