Ingredients used in Chinta Chiguru Mamsam
• Coriander powder - 1 tea spoon.
• Mint leaves - 1 bunch.
• Coriander leaves (chopped) - 1 bunch.
• Cocount grated - 1 tea spoon.
• Giner garlic paste - 1 tea spoon.
• Tumeric powder - 1 tea spoon.
• Red chilli powder - 1 tea spoon.
• Tender tamarind leaves ( chinta chiguru) - 500 grams.
• Mutton - 500 grams.
• Onions (chopped) - 1 number.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Jeera - 1 tea spoon.
• Salt - to taste.
• Whole garam masala - 1 number.
Method:
  • Take a pan add oil, mustard seeds, cumin seeds, whole garam masala, chopped onion mix well, then add turmeric powder, ginger garlic paste mix well and cook for few minutes then add coconut powder and cook it for 2 to 3 minutes.
  • Now add lamb mix well add little water and salt, coriander powder, chilli powder mix well and cover with the lid and cook till the lamb is tender.
  • You can also use the cooker to cook lamb.once the lamb is cooked then add the coriander leaves, mint leaves, tender tamarind leaves mix well and cook for 5minutes till the lamb is dry.
  • Once it is dry switch off the flame.

Fabulous! There are very few good ways to prepare lamb in the US--same old roast, chops, and mint jelly. Ugh. This will be beautiful. I've had great luck finding ingredients online, just in case you don't have Indian groceries in town. Don

you get Tamarind powder , they dry the leaves and powder them , but not as good as fresh , but what to do something is better than nothing . So I use the powder. but this is my husbands favorite curry.
