Ingredients used in BRINJAL BAJJI
• Brinjal eggplant(thin) - 8 numbers.
• Chick pea flour - 1 cup.
• Roasted chanadal powder - 1/2 cup.
• Carom seeds (ajwain) - 1/2 tea spoon.
• Salt - to taste.
• Cooking soda - pinch.
• Red chili powder - 1 tea spoon.
• Amchur powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Peanuts - 1/2 cup.
• Lime juice - 1 tablespoon.
• Oil - to fry.
• Coriander leaves(chopped) - 1/4 bunch.
• Onions (finely chopped) - 1 number.
Method:
  • In a bowl, add chickpea flour, roasted chana dal powder, carom seeds, salt, cooking soda, water and mix thoroughly and add 1 tablespoon of oil and make the bajji batter.
  • Take the eggplant, cut in the middle lengthwise and in between sprinkle red chili powder, coriander powder, amchur powder and close it.
  • Heat oil in a pan and dip the eggplant in the batter and deep fry till it becomes golden brown in color on slow flame.
  • In the same oil, add a ground nut and fry it then keep it aside.
  • Take a bowl, add finely chopped onions, coriander leaves, lime juice and mix thoroughly.
  • Cut the bajji in the middle and stuff the onion mixture then add roastedpeanuts and sprinkle the red chili powder.

Now the brinjal bajji is ready to serve hot.
