Description: Aloo chole is the delicious combination of boiled chickpeas and fried potatoes, which are cooked in the aromatic masala of onion and tomatoes and then flavored with variety of spices.

Recipe of Alu Chhole

Green Chillies 3 Numbers
Chilli Powder 1/2 Teaspoons
Turmeric 1/8 Teaspoons
Coriander Powder 1/2 Teaspoons
Clove Powder 1/2 Teaspoons
Pepper Powder 1/2 Teaspoons
Cumin Powder 1/2 Teaspoons
Cinnamon Powder 1/2 Teaspoons
Large Cardamom 1 Numbers
Soda Bicarbonate 1 Teaspoons
Bengal Gram 225 Grams
Tamarind 30 Grams
Onions 55 Grams
Tomatoes 55 Grams
Potatoes 115 Grams
Coriander Leaves 15 Grams
Fat 15 Grams

Directions

1. wash and soak gram overnight with soda bicarbonate .
2. Cook garam till tender .
3. Add powdered cardamom ,cinnamon ,cumin ,cloves ,pepper ,coriander and cool .
4. Heat half of the fat . Fry sliced onion,turmeric and chilli powder .
5. Add gram ,tomatoes ansd whole green chillies .
6. Continue cooking and mash gram .
7. Just before removing from the fire add tamarind juice and salt .
8.Boil potatoes and slice .
9. Fry half of the sliced sliced potatoes and add to the gram .
10 . Serve garnished with boiled and sliced potatoes and chopped coriander leaves .
