Description: Ada Pradhaman is another classic dessert or traditional payasam of Kerala. Payasam especially Ada payasam, be it palada payasam (prepared with rice ada, milk and sugar) or ada pradhaman (prepared with jaggery, rice ada and coconut milk) is especially popular during the festival of Onam. 

Recipe of Ada pradhaman Payasam

Ingredient Name Quantity Unit
Raisins 3 Numbers
Coconut 3 Numbers
Cardomom 50 Grams
Ghee 200 Grams
Jaggery 750 Grams
Cashewnuts 10 Numbers
Ada 200 Grams

Directions

  1. Melt Jaggery and keep aside.
  2. Boil water and keep the ada in it till it is cooked soft. Strain after 10 minutes and keep aside.
  3. Mix the melted jaggery with the cooked ada and stir for ten minutes in low fire.
  4. Take two extracts of the coconut milk and add the second extract to the above mixture.
  5. Boil this until it becomes thick. Take it off the fire and add the first extract of milk.
  6. Fry the cashew and raisins and ghee and garnish the payasam

Ada is made from rice flour. It is available in all Provision Stores. The authentic preparation of ada is different from the ones available from the stores.

Hey people,

Ada is sort of these little pieces of rice flakes. You can get ada at any store that sells kerala goods. If you are out of India I'm not so sure how you can get your hands on it, but try the Indian grocery stores, you just might get lucky

I have a question- while making this, why it is not soft?[once when i prepared,the ada turned strong pcs.Cooked in water-it was soft&kept aside,after preparing payasam it turned strong pcs.could you please help to know why it happened?]

mix water and rice flour to make a thin batter. spread this on a metal plate. steam cook this for five minutes and this can also be cooked in a micro. after this cools down cut it into square peices of half inch sides. these adas can be used immediately or can be dried in bright sunlight and can be used later also.

you have not mentioned what is ada.ada is made
from rice floor.it is something similar to semiya,the difference is it is made of rice and the shape is also like rice flakes.it is available in any good south indian stores.if u cook it traditionally it will take about one hour.u can add some milk made also for extra taste.
